Just the name brings up memories of those hot summer afternoons in Italy, relaxing on the beach, enjoying the sea and biting down on Caprese salad panino. I don’t know how the name was forged for this amazing combination of rich, velvety, salty cheese, sweet plum tomatoes and aromatic basil leaves. Maybe the first time happened to be in Capri.
At DueLire we use medley of the season’s best heirloom tomatoes and fresh Buffalo mozzarella, the traditional components to this classic summer salad. To make this dish shine, Chef Kevin chose a unique Buffalo Mozzarella from Columbia, yes Columbia, South America. Kevin’s passion to find the best ingredients lead him to discover Anabella Farms. Located high in the hills outside Bogata, Anabella Farms is the worlds only free range, grass fed water buffalo farm.
What really makes the difference is how the water buffalo are raised. Free to roam, grazing on native grasses, this natural farming philosophy results in the authentic free-range milk for making only the best cheese. The quality of this cheese rivals the Italian counterparts.
Why water buffalo milk you ask? Higher fat content…double to be exact! But it’s the subtle favor and creamy texture that makes the difference and counterpart the sweetness and the acidity of those flavorful summer heirloom tomatoes A perfect combination and a real delicacy!
The unique finish…anchovy breadcrumbs gives it the right bite. Pair this with a glass of light but velvety and rich fruit forward Valpolicella “Rafael” from Tommasi or a crispy citrusy with a nice balanced acidity Triade, a blend of 3 white grapes from Campania, Falanghina Fiano Greco.
